In the new year, we could all do with some extra color in our foods. This is a small way to add in some pink to your toast. Pink is a color that soothes emotions and promotes a state of wellness in the mind, according to psychological research. These things never hurt in life, so grab a beet root and make some hummus today!



Ingredients
For the hummus
- ½ red beet, cubed
- 3 cups black beans, cooked (garbanzo beans may also be used)
- 3 Tbsp. tahini
- 3 cloves garlic, minced
- Juice from ½ lemon
- ½ tsp. cumin, ground
- ½ tsp. coriander, ground
- ¼ cup olive oil
- 2 Tbsp. water
- Salt to taste
For the assembly
- Bread, one slice
- 1 Tbsp. red pepper paste
- ½ tsp. toasted sesame oil
- ½ avocado, sliced
- Sesame seeds (garnish)
Method
- Combine the beet, beans, tahini, garlic, lemon juice, and spices into a food processor or blender
- Blend until smooth
- While blending, pour the olive oil and water in to emulsify the mixture
- Assemble toast by spreading a layer of hummus, pepper paste, and sesame oil over the toasted bread slice
- Slice avocado and place on top of toast
- Garnish with sesame seeds
- Serve and enjoy
