So. You made some roasted tomatillo salsa, but you ran out of chips to eat it with. Fear not, for I have your solution. A burrito bowl is always a good idea. Also, you can substitute any ingredients for some that are readily available in your fridge. Let me know how yours turns out!
Ingredients
- 1 Tbsp. olive oil
- 3 Tbsp. onion, sliced
- 1 Tbsp. garlic, minced
- ¼ green bell pepper, sliced
- ¼ green zucchini, chopped
- 1 tsp. coriander, ground
- 1 tsp. cumin, ground
- ½ cup black beans, cooked
- ½ cup white corn
- Salt and pepper to taste
- Cilantro, chopped (garnish)
- Roasted tomatillo salsa (garnish)
- Sour cream (garnish)
- Brown or white rice
Method
- Heat the oil in a saucepan on the stove at medium heat
- Add the onion, garlic, and spices to the pan to sauté
- Add the bell pepper and zucchini
- Stir to incorporate
- Once the vegetables are soft, add the black beans and corn
- Add salt and pepper to taste
- Garnish with cilantro, salsa, and sour cream
- Serve with rice and enjoy
