Black Bean Burrito Bowl

So.  You made some roasted tomatillo salsa, but you ran out of chips to eat it with.  Fear not, for I have your solution.  A burrito bowl is always a good idea.  Also, you can substitute any ingredients for some that are readily available in your fridge.  Let me know how yours turns out!


  • 1 Tbsp. olive oil
  • 3 Tbsp. onion, sliced
  • 1 Tbsp. garlic, minced
  • ¼ green bell pepper, sliced
  • ¼ green zucchini, chopped
  • 1 tsp. coriander, ground
  • 1 tsp. cumin, ground
  • ½ cup black beans, cooked
  • ½ cup white corn
  • Salt and pepper to taste
  • Cilantro, chopped (garnish)
  • Roasted tomatillo salsa (garnish)
  • Sour cream (garnish)
  • Brown or white rice


  1. Heat the oil in a saucepan on the stove at medium heat
  2. Add the onion, garlic, and spices to the pan to sauté
  3. Add the bell pepper and zucchini
  4. Stir to incorporate
  5. Once the vegetables are soft, add the black beans and corn
  6. Add salt and pepper to taste
  7. Garnish with cilantro, salsa, and sour cream
  8. Serve with rice and enjoy
