A friend of mine gave me a bunch of peaches from a friend’s tree, but they were a bit underwhelming in taste. This was the perfect opportunity to make preserves! They turned out well too. The lemon is for the coagulation effect from the pectin, and the sugar is for taste, so feel free to adjust the flavors as you see fit. Don’t let your boring fruit go to waste!
Ingredients
- 10-20 peaches, pitted and chopped
- 2-4 Tbsp. sugar (I used cane sugar)
- Juice from ½ lemon
- Pinch of salt
Method
- Place all ingredients in a saucepan and bring to a soft boil
- Bring heat down to simmer and stir mixture
- Once the peaches have reduced and the consistency is more viscous, take mixture off the heat
- Pour or spoon preserves into a jar for storage
- Let cool on counter before refrigeration
- Serve and enjoy
