Cashew Cheese Balls

This recipe was from a while ago, but it was simple and refreshing, especially in this summer heat.  You can include this on any meat or cheese board, and it will not be out of place.  I would pair this with crackers, pickled vegetables, fresh cucumbers, or my red pepper paste.  Let me know what you think.


  • 2 cups unsalted cashews, soaked
  • 2 Tbsp. onion powder
  • 2 tsp. garlic powder
  • Juice of ½ lemon
  • Salt and pepper to taste
  • ¼ cup everything bagel seasoning


  1. In a food processor, combine all ingredients except the everything bagel seasoning
  2. Mix until the mixture is smooth and homogeneous
  3. Spoon mixture into a strainer and place into a medium bowl
  4. Cover with a damp cloth and let drain in fridge for 4-8 hours
  5. Once mixture is dense enough to hold a shape, roll into small balls and cover in everything bagel seasoning
  6. Serve and enjoy
