Chickpea Nuggets

Sometimes I want some chicken nuggets but can’t be bothered to get them at the store.  Instead, I make this overly-complicated recipe as a replacement and congratulate myself for being lazy and staying home.  I hope y’all enjoy.

Ingredients

  • 2 cups chickpeas, cooked
  • ¼ onion, roughly chopped
  • 3-5 cloves garlic, minced
  • ½ red bell pepper, chopped
  • 1 tsp. cumin, ground
  • 1 tsp. coriander, ground
  • ½ – 1 cup oats
  • Salt and pepper to taste

Method

  1. Preheat oven to 400°F
  2. In a food processor, use the S-blade to mince onion, garlic, and bell pepper
  3. Add chickpeas and spices
  4. Pulse until well-blended
  5. Add oats in batches and pulse
  6. If the mixture is not sticky enough to form balls, add oats to reach desired consistency
  7. Form mixture into balls and place on parchment paper-lined baking sheet
  8. Bake for 15-20 minutes
  9. Serve and enjoy
