PB&J Cookies

If you enjoy reminiscing about simpler times, but you’re fancy now and don’t eat carbs, I completely understand.  This one is for you.


  • ½ cup rolled oats
  • 2 cups dates, chopped
  • ½ cup peanut butter
  • Pinch of salt
  • Any jam or preserves of your choice


  1. Add oats into a food processor with the S blade
  2. Pulse until oats are processed into a coarse flour
  3. Add dates, peanut butter, and salt into food processor
  4. Process until mixture is homogeneous
  5. Roll balls and press thumb into center to make small well in each cookie
  6. Refrigerate for approximately a half hour
  7. Spoon jam or preserves into well
  8. Serve with coffee, milk, tea, or any beverage of your choice
  9. Enjoy!
