So, you’ve made or have a bunch of tortillas, and there is nothing to fill them. Fear not. I am here for you. Within 10 minutes, your problems will be no more.

Ingredients
- ½ medium onion, sliced
- 3-5 cloves garlic, minced
- ½ red bell pepper, sliced
- ½ green bell pepper, sliced
- 2 cups mushrooms (shitake or portobello), sliced
- 2 vine-ripened tomatoes, chopped
- 2 tsp. curry powder
- 1 tsp, cumin
- 1 tsp. turmeric
- 1 pinch cayenne pepper
- ½ lemon, juiced
- Salt and pepper to taste
Method
- Heat skillet or pan on stove with medium-high heat
- Add vegetables and sauté for approximately 5 minutes
- Add spices and sauté for approximately 2 more minutes
- Add lemon before serving
- Serve with hominy tortillas, recipe here
