I don’t know what it is about October, but I am wanting fajitas all the time. If you’re looking for a different way to do fajitas, try blending up the ingredients into a dough and baking it. It’s actually quite tasty.
Ingredients
- ¼ red bell pepper, chopped
- ¼ green bell pepper, chopped
- ½ medium onion, chopped
- 4-6 cloves garlic, chopped
- 2 cups black beans, cooked
- 1 tsp. cumin
- 1 tsp. coriander
- 1 tsp. chili powder
- Salt and pepper to taste
- ¼ cup cilantro (optional)
- ½ cup oatmeal (more to achieve doughy consistency)
Method
- Preheat oven to 400°F
- Combine ingredients up to and including garlic into food processor with S blade
- Process until vegetables are minced
- Add in beans, spices, cilantro, and ½ cup oats
- Process until mixture is homogeneous
- Add more oats until dough-like consistency is reached
- Spoon and roll balls onto parchment-lined baking sheet
- Bake for 20-25 minutes or until the crust is golden and crispy
- Let sit for 15 minutes at room temperature
- Serve with pico de gallo, guacamole, or any condiments you want
