Black Bean Fajita Balls

I don’t know what it is about October, but I am wanting fajitas all the time.  If you’re looking for a different way to do fajitas, try blending up the ingredients into a dough and baking it.  It’s actually quite tasty.

Ingredients

  • ¼ red bell pepper, chopped
  • ¼ green bell pepper, chopped
  • ½ medium onion, chopped
  • 4-6 cloves garlic, chopped
  • 2 cups black beans, cooked
  • 1 tsp. cumin
  • 1 tsp. coriander
  • 1 tsp. chili powder
  • Salt and pepper to taste
  • ¼ cup cilantro (optional)
  • ½ cup oatmeal (more to achieve doughy consistency)

Method

  1. Preheat oven to 400°F
  2. Combine ingredients up to and including garlic into food processor with S blade
  3. Process until vegetables are minced
  4. Add in beans, spices, cilantro, and ½ cup oats
  5. Process until mixture is homogeneous
  6. Add more oats until dough-like consistency is reached
  7. Spoon and roll balls onto parchment-lined baking sheet
  8. Bake for 20-25 minutes or until the crust is golden and crispy
  9. Let sit for 15 minutes at room temperature
  10. Serve with pico de gallo, guacamole, or any condiments you want
  11. Enjoy!
