Pea Soup Balls

Do y’all remember when I posted that split pea soup recipe?  Yeah, me neither.  It was a while ago.  Anyway, with fall comes soup weather, so here is something to do with those leftovers!

  • ½ onion, cubed
  • ¼ yellow bell pepper, cubed
  • 2-3 cups leftover split pea stew, found here
  • 1-2 cups rolled oats to reach desired consistency
  • 1 cup frozen peas, thawed
  • Salt and pepper to taste

  1. Preheat oven to 400°F
  2. Use food processor to blend onion and pepper
  3. Add in stew, oats, peas, and spices to blend into dough-like consistency
  4. Spoon and roll balls onto parchment-lined baking sheet
  5. Bake for 20-25 minutes or until the crust is golden and crispy
  6. Let sit for 15 minutes at room temperature
  7. Serve with as many condiments as you want
  8. Enjoy!
