I am a firm believer in having bread in my regular diet because it connects me to the greater non-vegan culture at large as well as cultures throughout history that relied on bread for survival. It is a sacred food to me, and I treat it as such. This is a simple recipe to make homemade bread a regular staple in your home, and I hope you love it as much as I do!


Ingredients
- 2 cups water, warm
- 1 tsp. sugar
- 2 tsp. yeast
- 1 cup all-purpose flour
- 2 cups whole wheat flour
- 1 cup rye flakes, ground (any type of ground grain is fine for this, even more whole wheat flour – this is just to add some extra texture)
- ¼ tsp. salt
Method
- Dissolve sugar in water
- Add yeast to water and set aside to bloom
- Combine flours and salt in a large bowl and mix
- Once yeast has formed a spongy layer at the top of the water, add liquids to flours
- Mix until well-combined
- Let dough sit in bowl with damp towel on top to rise for 1 hour
- After the dough has risen, pour onto flour-dusted surface
- Kneed dough for 5-10 minutes
- Divide dough into 8 equal pieces (or however many pieces you want)
- Roll out each piece into a flat disc approximately ½ inch thick
- Heat flat pan on stove top to medium-high heat
- Place flatbread on pan and let cook for approximately 3 minutes
- Flip and cook on other side for approximately 1-2 minutes
- Repeat for each flatbread
- Serve with hummus, as a sandwich, or by its wonderful, fluffy self
