This recipe is so simple, but it is unbelievably delicious. I think it’s the vinegar. It takes it to the next level. This recipe is perfect on tostadas, which you can find here, or in tacos (which is basically the same thing but with a floppy tortilla). Let me know how you like it!
Ingredients
- 3 small-medium sweet potatoes
- 3 small-medium Yukon gold potatoes
- 1 cup cooked beans
- ½ cup scallions, chopped
- ½ cup bell pepper, chopped
- Juice of ½ a lime or ½ a lemon
- 1 Tbsp. red wine vinegar
- 1 Tbsp. nutritional yeast
- Salt and pepper to taste
Method
- Place potatoes in steamer and steam until tender (15-20 minutes)
- Mash the potatoes with a fork in a bowl
- Mix all of the other ingredients in
- Serve with avocado and tortilla chips or on toast
