Another salad! The dressing is basically my Thai peanut sauce dressing but I didn’t have peanut or almond butter. Instead, I used tahini! It’s really good and adds a new element to the salad. An awesome addition would be mandarin oranges! Let me know what y’all think!
Ingredients
Salad
- 5-10 small-medium sized sunchokes, cubed
- 1 head romaine lettuce, chopped
- 2-3 green onions, chopped
- 1 16 oz. can black soy beans
- Black and/or white sesame seeds for garnish
Dressing
- 2 tsp. tahini
- 1 tsp. tamari
- 1 tsp. maple syrup
- ¼ tsp. garlic powder or 1 garlic clove, minced
- Squeeze of lime (optional)
Method
- Preheat oven to 400°F
- Place sunchokes on parchment paper-lined baking sheet
- Bake in oven for 40 minutes
- For the dressing, combine all ingredients in a small bowl and mix thoroughly
- For the salad, combine all ingredients in a large bowl and mix thoroughly
- Add the dressing to the salad and mix thoroughly
- Garnish with sesame seeds
- Enjoy!
