Roasted Sunchoke Sesame Salad

Another salad!  The dressing is basically my Thai peanut sauce dressing but I didn’t have peanut or almond butter.  Instead, I used tahini!  It’s really good and adds a new element to the salad.  An awesome addition would be mandarin oranges!  Let me know what y’all think!

Ingredients

Salad

  • 5-10 small-medium sized sunchokes, cubed
  • 1 head romaine lettuce, chopped
  • 2-3 green onions, chopped
  • 1 16 oz. can black soy beans
  • Black and/or white sesame seeds for garnish

Dressing

  • 2 tsp. tahini
  • 1 tsp. tamari
  • 1 tsp. maple syrup
  • ¼ tsp. garlic powder or 1 garlic clove, minced
  • Squeeze of lime (optional)

Method

  1. Preheat oven to 400°F
  2. Place sunchokes on parchment paper-lined baking sheet
  3. Bake in oven for 40 minutes
  4. For the dressing, combine all ingredients in a small bowl and mix thoroughly
  5. For the salad, combine all ingredients in a large bowl and mix thoroughly
  6. Add the dressing to the salad and mix thoroughly
  7. Garnish with sesame seeds
  8. Enjoy!
