This recipe was not my own creation. The dressing came from none other than the queen of mustard herself! Of course, I am talking about Jenny Mustard! The salad came out with a delicious and mellow flavor. I recommend this salad for anyone looking for something simple, salty, and tasty. Let me know what y’all think!
Ingredients
Dressing
- 1 tsp. miso paste
- 1 tsp. yellow mustard
Salad
- 2 cups chickpeas or kidney beans, cooked
- 1 head romaine lettuce
- 1 bell pepper, chopped
- ½ cup green onion, chopped
- ½ cup raisins (optional)
Method
- Mix the dressing ingredients together with a splash of water
- Add water to reach desired consistency
- Mix the salad ingredients together and toss with the dressing
- Serve with gumbo and hushpuppies, recipe here, or on its own
