Black Bean Soup

This is another Instant Pot recipe!  If you do not have an Instant Pot (pressure cooker), this soup can easily be made on the stove.  It will have to simmer for a couple hours instead of 15 minutes, but it will still work.  Let me know what you think!

Ingredients

  • 2 cups dry black beans, soaked
  • 1 onion, chopped
  • 3-5 cloves garlic, chopped
  • 3-5 carrots, chopped
  • 3-5 stalks celery, chopped
  • 1 L vegetable broth
  • 1 tsp. cumin
  • 1 tsp. coriander
  • 1 Tbsp. chili powder
  • ½ tsp. cayenne pepper
  • Salt, to taste

Method

  1. Add all ingredients into the Instant Pot
  2. Add enough water to cover the ingredients
  3. Close and seal the Instant Pot
  4. Press “Manual” and set the time to 15 minutes (25 minutes if beans are dry)
  5. After the timer goes off, let the pot depressurize for 10-15 minutes
  6. Open the seal to “Venting”
  7. Blend half of the soup with an immersion blender (or spoon half of the soup into a blender) to your desired thickness
  8. Serve with potatoes, toast, rice, avocado, or whatever works for you
  9. Enjoy!

“In my vision, the man brought me back to the entrance of the Temple.  There I saw a stream flowing east from beneath the door of the Temple and passing to the right of the altar on its south side. […] When I returned, I was surprised by the sight of many trees growing on both sides of the river.”
-Ezekiel 47:1 & 7
