Maple Mustard Salad with Strawberry Balsamic Glaze

This recipe was a complete experiment, but it ended up being one of the best salads I’ve ever made!  Inspiration for the dressing came from Megan Elizabeth, and the salad I formulated around that dressing.  It turned out better than I could ever imagine!

Maple Mustard Dressing

  • 1 Tbsp. almond butter
  • 2 tsp. maple syrup
  • 2 tsp. Dijon mustard
  • Water to reach desired consistency

Strawberry Balsamic Glaze

  • 1 Tbsp. balsamic vinegar
  • 2 tsp. strawberry jam

  • 4 cups kale, chopped
  • 1 cup red cabbage, sliced
  • ½ cup green onion, sliced
  • 1 orange sweet potato
  • ½ cup strawberries, chopped
  • ½ cup peaches, chopped
  • ½ cup blueberries

  1. Preheat the oven to 400°F
  2. Place sweet potato on parchment paper baking sheet and bake for 30 minutes
  3. Place other salad ingredients in a bowl and mix
  4. For the dressing, mix all the ingredients together until the desired pourable consistency is reached
  5. Mix the dressing into the salad
  6. For the glaze, mix the ingredients together
  7. Once the sweet potatoes are baked, take out of oven and cool for 5 minutes
  8. Place potatoes in a bowl and cover with glaze
  9. Place potatoes on top of salad
  10. Enjoy!
