This recipe was a complete experiment, but it ended up being one of the best salads I’ve ever made! Inspiration for the dressing came from Megan Elizabeth, and the salad I formulated around that dressing. It turned out better than I could ever imagine!
Ingredients
Maple Mustard Dressing
- 1 Tbsp. almond butter
- 2 tsp. maple syrup
- 2 tsp. Dijon mustard
- Water to reach desired consistency
Strawberry Balsamic Glaze
- 1 Tbsp. balsamic vinegar
- 2 tsp. strawberry jam
Salad
- 4 cups kale, chopped
- 1 cup red cabbage, sliced
- ½ cup green onion, sliced
- 1 orange sweet potato
- ½ cup strawberries, chopped
- ½ cup peaches, chopped
- ½ cup blueberries
Method
- Preheat the oven to 400°F
- Place sweet potato on parchment paper baking sheet and bake for 30 minutes
- Place other salad ingredients in a bowl and mix
- For the dressing, mix all the ingredients together until the desired pourable consistency is reached
- Mix the dressing into the salad
- For the glaze, mix the ingredients together
- Once the sweet potatoes are baked, take out of oven and cool for 5 minutes
- Place potatoes in a bowl and cover with glaze
- Place potatoes on top of salad
- Enjoy!
