Blueberry Cashew Smoothie Bowl

This recipe, oddly enough, was inspired by a Lara Bar.  It is quite delicious, and I highly recommend this one.  Let me know what y’all think!



  • 2 cups frozen blueberries
  • 4 frozen bananas
  • ½ cup chia seeds soaked in water
  • 1 Tbsp. cashew butter
  • 1-2 Tbsp. cashews, chopped
  • Fresh blueberries, whole or halved for garnish
  • 1 fresh banana, sliced for garnish
  • Chia seeds for garnish (optional)


  1. Place the frozen bananas, blueberries, and soaked chia seeds into a blender
  2. Blend until creamy (help the blender out by thawing the frozen fruit for about 15 minutes before blending)
  3. Scoop smoothie into a bowl
  4. Swirl in cashew butter
  5. Top with cashews, blueberries, banana, and chia seeds
  6. Enjoy!

  1. I never thought to use cashews in a smoothie bowl like this, but it sounds especially delicious with blueberries. I guess I just horde cashews to make vegan sour cream for savory dishes, haha!
