I know that leftovers aren’t the most glamorous foods to eat, especially if you eat the same meal over and over. This is a wonderful opportunity to get creative in the kitchen! I was all out of brown rice, and I needed to cook some potatoes before they went bad, so then the leftover curry poutine was created! I am from the United States, so poutine is not a common dish, but with some research and recipe augmentation, I believe I captured the essence of the poutine in this dish. I hope you get to try this dish out too!
Ingredients
- Golden potatoes, chopped
- 1 tsp. garam masala
- 1 tsp. coriander
- Leftover curry, found here
- Leftover raita sauce, also found here
- Raisins for garnish
- Cilantro, chopped for garnish
- Green onion, chopped for garnish
- Hot sauce
Method
- Coat potatoes with the garam masala and coriander
- Bake potatoes at 400°F for 30 minutes
- Reheat curry
- Plate the potatoes, curry, raita sauce, hot sauce, and garnishes
- Enjoy!
