Falafel Burger

This recipe is inspired by the falafel recipe on forksoverknives.com, which is phenomenal.  My version was born from having particular leftovers and missing certain ingredients in that recipe.  It turned out great, thankfully!  Definitely go and check out the original, though.

Ingredients

Patty

  • 2 cans of garbanzo beans or 2 cups cooked chickpeas
  • 3 cloves garlic
  • ½ cup cilantro, packed
  • ¼ average-sized red onion, roughly chopped
  • 1 cup rolled oats
  • Juice of 1 lemon or lime
  • 1 tsp. each of cumin, coriander, and turmeric
  • ½ tsp. each of salt, black pepper, and crushed red pepper flakes

Burger

  • Whole grain burger buns (I prefer Ezekiel sprouted grain bread #holybread)
  • Lettuce
  • Tomato
  • Sliced onion
  • Any other vegetables you fancy to top a burger
  • Cashew sauces found here and here
  • Tahini sauce from forksoverknives.com
  • Any other condiments that you want on a falafel

Method

  1. Preheat the oven to 400°F
  2. For the patty, add all ingredients except the oats into a food processor
  3. Pulse to mix
  4. Add the oats after a homogeneous mixture is achieved
  5. Form the mixture into patties
  6. Place patties on a parchment-lined baking sheet
  7. Bake for 20 minutes
  8. Assemble as many burgers as you care for
  9. Enjoy!
