Thai Peanut Sauce

This dressing is great on salads, in noodles, or in wraps.  I enjoy Thai food immensely, so this dressing is a regular occurrence in my kitchen.  There are many variations of it as well.  Sub out the peanut butter for almond butter, and it tastes just as good!  Let me know what y’all think!

Ingredients

Dressing

  • 2-3 Tbsp. peanut butter, chunky or smooth (your preference)
  • 1-2 cloves garlic, minced
  • Juice of ½ a lime
  • 1 tsp. tamari
  • 1 tsp. maple syrup
  • Water to thin out dressing if needed

Salad

  • Steamed, mashed white sweet potato
  • 1 can beans or 2 cups cooked beans
  • 1 cup cooked grains
  • ¼ cup green onion, chopped
  • ¼ cup red or yellow bell pepper, sliced
  • Other colorful vegetables (carrot, cabbage, etc.), sliced
  • Salad greens like romaine or baby spinach
  • Chopped cilantro for garnish

Method

  1. For the dressing, mix all of the ingredients together in a small bowl
  2. Add water to reach the desired consistency, which is creamy but pourable
  3. For the salad, mix all of the ingredients together in a bowl
  4. Place on top of greens
  5. Drizzle dressing on top
  6. Sprinkle cilantro on top for garnish
  7. Enjoy!
